Instructions

Boil together meat, split gram and the spices till the meat and the gram are tender and no water remains.
Let the mixture cool then pass through a mincing machine to blend all ingredients together into a paste.
Divide the meat paste into portions.
Hollow out each portion and put in a little of the filling.
Pat into flat round cakes, dip in beaten egg and shallow fry in Cooking oil until deep brown.

In a bowl, beat the egg whites until thick. Add the sugar and beat until stiff. Add the cream and continue beating until the mixture is thick and creamy. Gently mix in the mango pieces.
Cover and freeze until almost set. Take out, beat again and return to the freezer to set overnight.
One hour before serving, place the ice cream in the refrigerator to soften a little.
Serve it garnished with nuts and crunches.

Cover with a damp cloth and set aside for 30 minutes.

Instructions

Wash the rice, drain off all the water and keep aside.

Mix coconut, coriander and khus khus seeds, 2 cloves, 2 cinnamon, 2 cardamoms, 2 onions and blend them to a fine paste. Heat oil in a pan, fry the remaining spices, chopped onions, green chilies and garlic for a few minutes. Cut the chicken into desired pieces and add to this mixture with coriander and mint leaves. Also add salt, chili powder, turmeric, ginger-garlic paste and cook the chicken by covering the pan. Add water if required.

Now add ground paste to the pieces and cook until it is done. Boil water in another pan, add washed rice to the water with saffron and cook until it is tender. Remove from heat and drain off all the water. In a separate wide pan, place the rice at the bottom as a layer and above this, place the chicken pieces as another layer. Repeat this process until the rice and chicken ends. Sprinkle the lemon juice on top and allow it to cook on low heat for about 10 minutes.

Serve it hot with Raita!!

Trim all fat from beef and rinse it thoroughly.
Add vinegar, ginger, black pepper, lemon juice and salt and mix well.

Fish Cakes Food Recipe

Instructions

Place fish, parsley, onion, eggs, salt, vinegar, spices and breadcrumbs in a bowl and mix well with hands.
Crush the garlic and pound with loomi in a mortar and pestle until the paste is formed: Add to fish mixture and mix well again.
If too wet, add little flour, if too dry, add little cold water.
Form the mixture into small cakes approximately 3" (7.5cm) diameter and roll in the breadcrumbs.
Deep fry until they turn golden brown. Serve them hot!

These savoury fish cakes are fried just long enough to become light and fluffy. The spices added give them sufficient flavour to be tasty and not too spicy.
A favourite for any afternoon visit, the cakes can be made in advance and kept in your refrigerator for up to 24 hours, then fried. Enough for 6-8 serves.

Heat the oil in a heavy pan, cook the onion, garlic and red pepper till soft.
Add the tomato and cook another 10 minutes.

Coconut Ice Cream Food Recipea

Instructions

Divide the grated coconut in two equal parts. Mix 4 table spoon of milk in one portion and blend it in mixer. Heat 6 table spoon of sugar on simmer till it gets melted, and then mix the rest of milk in that sugar, boil it. Add rest of the sugar and boil it for 4 minutes. In the meantime mash the coconut and take the juice out of coconut in another container.
Now mix the mashed coconut, coconut juice, condensed milk, boiled milk and vanilla assense in a container. You can add lemon juice if you want.

Jalebi Food Recipe

Mix together the flours, oil, yogurt and water to make a medium thick paste. Cover and keep overnight for fermentation.
Prepare a two string syrup with the sugar and water. Add yellow color and saffron to the syrup. Keep aside.
Beat the flour mixture well and fill in a plastic bag with a hole at the bottom.
Squeeze out the batter by pressing the bag into the hot ghee.
Drop medium sized whirls in a continuous flow beginning from outer circle and ending in the center. This will give better shape to the jalebies.
Fry them until crisp and golden color on both sides carefully.
Drain and drop in the syrup. In 5 minutes, the jalebies will be thoroughly soaked.
Drain and serve hot.

Add the meat in a pot (better if you use kerahi) with garlic & ginger and leave on medium heat for the water to dry.
When that is done add 3 glasses of water, cover and leave to tenderize. When the meat has softened add everything, including Cooking oil, except green chillies & tomatoes.
Increase the heat to dry water if any then add green chillies & tomatoes. Lower the heat and cook it covered for 5-10 minutes.
When the tomatoes are softened, increase the heat and cook till the water dries.

Instructions

You can use an ordinary oven, preheated to the maximum temperature instead of a tandoor. Clean the oven thoroughly before use.
Mix 2 tablespoons of yellow coloring and about 1/2 tablespoon of red together. Brush on the chicken and let stand for a few minutes then proceed with the recipe.
Using kitchen shears or a sharp knife, cut the chicken breast in half across the middle. Squeeze the lemon juice over the chicken and season generously with salt.
Transfer the chicken pieces to a large plastic bag. Place the onion, garlic, ginger and chili into the bowl of a food processor and process until finely chopped. Add the garam masala and yogurt. Process until smooth. Pour the yogurt marinade into the plastic bag with the chicken and squeeze the bag until the chicken is well coated. Seal the bag and refrigerate for several hours or overnight.
Preheat the oven to the highest temperature possible, 500 to 550 degrees. Place the chicken in a single layer in a baking dish and bake for 20-25 minutes until cooked through.

Instructions

Bring the water, rose water and sugar to boil, add the saffron, remove from heat and set aside.
Mix the milk powder, flour, soda, heavy cream well and knead until a soft dough is made.
Take a teaspoon of the dough, place one cardamom seed in it and make a small ball.
Similarly make the balls with the remaining dough, and fry them when the ghee is ready until golden brown.
Remove with a slotted spoon and transfer into the syrup, which should be quite warm.

In a deep pan mix all ingredients.
Keep aside for a while, then add lemon juice and mix thoroughly.
Heat oil and deep fry pakoras till golden.
Take out and spread on newspaper.

Kheer Food Recipe

Instructions

Wash and drain the rice. Soak in 1/2 cup water for 1/2 hour. Boil the rice in the same water until it is coated and the water dries up. Add the milk and simmer on low heat for 1 1/2 hours.
Scrape the sides and bottom frequently to prevent sticking and mash rice while stirring. When it is creamy, add sugar and stir in well. Remove from heat and add crushed cardamom seeds, rose water and shredded almonds.
Serve hot or cold decorated with silver or gold leaves (optional). Silver/Gold leaves are very fine and tasteless.

Chocolate Cake Food Recipe

Place rack in center of oven, and heat to 350°.
Lightly butter two 9-inch round cake pans. Line with parchment paper, and dust sides with cocoa; tap out excess. Set aside.
In a large bowl, combine 3/4 cup cocoa, sugar, flour, baking powder, baking soda, and salt.
Add butter or oil, milk, eggs, and vanilla. Using a handheld electric mixer on medium speed, beat for 2 minutes.
Add boiling water, and beat to combine (batter will be thin).
Divide batter evenly between prepared pans.
Bake until cake tester inserted in the center comes out clean, 30 to 35 minutes. Cool in pans for 10 minutes. Run a paring knife around edge of cakes to loosen them from pans. Invert onto a wire rack to cool completely.
Place one layer, top side up, on a serving plate.
Using an offset spatula, spread with 1 cup of Chocolate Frosting. Top with remaining layer, bottom side up, and frost with remaining frosting.

Instructions For Chocolate Frosting

In a medium saucepan, melt butter.
Add cocoa, and beat with a handheld electric mixer to combine.
Alternately add confectioners’ sugar and light cream, beating on medium speed until frosting reaches a spreading consistency.
Add vanilla, and beat to combine.
Add more light cream or sugar as needed to achieve desired consistency.

Instructions

Wash the chicken inside and out, then marinate in salt, vinegar, lemon juice, ginger and garlic paste, red chillies, white cumin, black pepper and yellow food colour.
It is better to refrigerate the marinated chicken for 4 hrs but it can also be left_inner outside.
Half an hour before cooking, heat Cooking oil in a deep pan or wok, deep fry the chicken on low heat, drain on absorbent paper and serve hot.

Mix together all the spices and yogurt and papaya and coat the beef cubes with it.
Leave to marinate for 5-6 hours preferably overnight.
Then barbeque over charcoal.

Preparation time ([days] hrs:min): 00:20

Cooking time ([days] hrs:min): 00:30

Grind into a paste: cloves, almonds, coriander seeds, Cumin, cardamom, cinnamon and grated fresh coconut until soft and keep aside.
Cut chicken into a little larger than bite sized pieces.
Heat oil in a wide, non-stick skillet and fry onions, garlic and ginger pastes until onions are deep brown. Now add chicken, chili powder, turmeric, salt and curry leaves.
Fry until chicken pieces are lightly browned. Now add yoghurt, tomatoes, coriander leaves and mix well.
Cover and cook on high heat until water content has reduced coinsiderably (gravy looks thick and almost sticks to the chicken pieces) and then add the ground paste and 2 cup of water.
Cover and cook on low heat for 25 minutes or until the gravy looks thick.

Serve it hot. Goes very well with plain white rice.

Ras Malai Food Recipe

Instructions

Boil 2 liter milk, add yogurt and lemon juice to it. Boil for 5-10 minutes. Paneer will separate from water. Transfer it to a clean thin cloth, tie it to drain water and leave overnight. Make small balls and flatten them to small patties (1 to 1.5 inch).
Take 5 cups water in a pan, add 1 cup sugar and boil. Put the paneer patties in this boiling water gently. Let it boil till they become soft and spungy (it takes about 15 minutes).
In another pan, put the milk and 1 cup sugar, add milk powder and boil until the quantity reduces to half. Take care that milk should not stick at the bottom of the pan. Add cardomom powder, pieces of almonds and pistatios, and saffron strands.
Gently remove each patty from the water, and drain all the water and transfer to the prepared milk. Boil at low heat for 5 minutes.
Remove from heat and allow it to cool to room temperature.
Put the Ras malai into refrigertor for 3-4 hours. Serve it Chilled.

Instructions

Chop mustard greens finely and wash thoroughly.
In a heavy based pan boil the greens without any water with all spices.
When all its natural water is evaporated, remove from heat.
Slightly cool it and then grind to a smoothpaste. Heat oil or banaspati and add the paste.
Stir for a few minutes and gradually add gram flour or cornmeal and cook for 5 minutes.
Before serving, garnish with melted butter and garlic.
